There you go. If you think of the influence of Christianity or the last 2000 years or so, and the remarkable lack of fashion choices, Monks and Nuns are quite useful.

Jesuits chose black because they could, as black dye was invented in the fourteenth century: plenty of fashion awareness amongst the clergy!  :o   8)   :D   ;)

Seeing the new monk figure reminds me I had been looking for a figure to use for a priest to go with Spanish Civil War Carlists.

Not sure about that. I think that the sheep & goats are most flexible, as they go back to biblical times. :'(

Sheep and goats seem to have been the first animals to be domesticated, about 12,000 years ago. Not that they looked exactly like the Pendraken ones.

Back when I did Archaeology at uni the remains of sheep and goats at sites like Jericho and Çatal Hüyük were described merely as ovicaprids because the fragmentary remains were indistinguishable to the tests available at the time.
