Any of the GR1 infantry in a cap rather than a helmet? If not, can the DAK infantry be used for summer '44 in Europe? (i.e. are they in shorts?)

No not in cap. Don't know about the afrika korps models though, i only have the regulars.

You could try the WW1 Austrians in cap, they'd make a good stand if you don't look closely, pic below the shooting figure is DAK apparently:-
