A knight in Summa de vitiis et virtutibus by Willelmus Peraldus, England, c.1236 (http://warfare2.netai.net/13/Harley_MS_3244-28r.htm)

Blue horses aren't rare. They can be seen in the Bayeux Tapestry (http://warfare2.netai.net/6C-11C/Bayeux-1.htm) and the Hortus _Deliciarum (http://warfare2.netai.net/12/Hortus_Deliciarum-p3-4.htm) for example.
