Any suggestions for what to use as the following for 1914 cavalry:

German Cuirassier, Dragoon and Hussar

French Chasseur a Cheval and Hussar

British non-lance armed cavalry

How different were the French and German uniforms from the 1870s?

Not greatly as far as the Germans are concerned. The only problem is the lance armament which would have to be incorporated somehow. Not sure about the French. The kepi got lower and more "squashed" and the steel helmet acquired a cover, so possibly not so useful.

You could try the C19th Italian  light cavalry for French hussar and chasseur a cheval. The only real problem is the epaulettes will need filing off. As far as I can remember the chasseurs had black frogging to the light blue jacket whilst the hussars had white.
