A mix of the Dark Age Arabs and 16thC Ottomans would be your best bet Craig. I will dig around in my osprey stuff to see if I have any info.
To see what Seljuks looked like see primary sources with illustrations of Seljuks (http://warfare.atspace.eu/Turk/Seljuk.htm)

Ohhh good sites!
Just been having a read about Seljuqs and depending on how mongolly they are the new Mongol range may well be usable as Seljuqs as they both used similar weapons / clothing etc.
First crusades here we come......

By the way, as luck would have it the latest issue of Medieval Warfare mag is all about Seljuqs / Seljuks. Well worth 5.99 in my humble opinion if you are considering any Turk/Byzantine or Turk/Crusader action.
