How many `real` highlander regiments ad been involved in AWI campaingns? In other words' how
many highlanders units may I correctly paint?

42nd - 2 battalions
71st - 3 battalions
84th - (Royal Highland Emigrants), technically, a loyalist regiment - two battalions
Queens Rangers had a Highlanders company
Royal NC Regiment had also a number of Highlanders in its ranks
I wouldn't have thought they would be wearing highland uniform, though. After the 1745 Rebellion the kilt was banned in the British army and as late as 1815 Scottish regiments were still referred to as "North British".
Both 42nd and 71st wore kilts after their arrival to America. They changed gradually to trews, 71st later than 42nd.
84th was formed from former British soldiers, that took part in SYW. In SYW highland regiments in Germany (87th and 88th) wore kilts.

Er, no. The loyalist Highland Militia (mostly campbells, phtooee!!) and the Government Regiments (42nd) retained the kilt and the dark government tartan, only civilians were disbarred from wearing tartan and the kilt.

Also for those who want to retain their sanity and their eyeballs , the 71st received a shipment of brown trousers to replace their tartan trews.
