...well? What is it? Faces? Tanks? Bedrolls? Eyes? :o Bases? etc...
What, when presented with your nice new toys, do you most look forward to hitting with the brush..?
Varnishing...then I know the little buggars are finished
Flesh, because I do it last. It means the ordeal is nearly over, plus the figure sort of "pops" into life.
The GODWASH that is Devlan Mud.
Up to that point things look a bit rough and flat.
On goes the overall wash and 'ping', the world is a better place... :D

I have never used the stuff but am interested...do you highlight again after the wash...and wuld the black be better on 10mm figs to give better contrast?
Yes, always highlight after the wash or it just looks flat.
Black gives an artificial look that i personally don't like, but it might work for you.
Do you use the original colour to highlight again or a lighter shade?
Both ;)
As nik says, both is a good idea, although on 10mm, i tend to just highligh with a 'lighter' tone.
E.g.
At 10mm
Undercoat = black
Base = GW Scab red
Wash = GW Devlan Mud
Highlight = GW Blood red
At 28mm
Undercoat = black
Base = GW Scab red
Wash = GW Devlan Mud
Wetbrush = GW Scab red
Highlight = GW Blood red

? I always start with the flesh. So I suppose the flesh bit is my favourite bit - one the figure comes to life and two, it motivates me to finish the figure!
I like painting command units, I like to give them a little extra detail and I always enjoyt the mini-diarama effect. If we are going specific however, I have just started trying to paint non-metallic metallic painting on gun barrels, swords etc. and am enjoying the experiment quite a bit.
Flesh for the same reasons said above - i also do flesh first and love that effect when the highlights are finished.
I also like doing the large areas like jackets/cloaks - lots of scope for deep lush reds, greens etc.
