Title: Dream terrain

Greeks against Persians; river in spate right down the middle, giving me a very secure flank for my hoplites. Mmmmmmmmm.....

Surely that would allow the Persians free range with their arrows. Remember a completion game were my Persians had a hill with a marsh in front, and woods to each side. Lasted 3 moves, entire Greek  army routed.

I had no trouble telling off some peltasts ready to deal with any outflanking forces that tried to cross. In fact, they did try, and lost three elements drowned. Peltasts never needed to get up close enough to be shot at.
Maybe your stream was narrower?

Correct. The former layout wouldn't have guarded a flank very well.
