Anybody got any tips for pickling chillies.I have a garden full of the things and dont like throwing away good food,I just cant eat any more,help...! :'(
If I cant find a good recipe for pickling chillies I could be looking at a week of,
Mon. Lamb and chilli noodles.
Tues. Beef curry (with extra chillies).
Wed. Vegetable stir-fry (with chillies).
Thur. lamb Chilli.
Fri. Chilli Dog and a burger.
Sat. Chicken curry (with extra chillies).
Sun. A chicken roast (even the man had a day off).
So the choice is yours,post a recipe/tips for pickling my chillies or do I have to put the toilet roll in the fridge again. :o

Look up some recipes for assorted Thai chillie pastes. They keep well.

You can freeze chillies easily, that's what I do with my leftover chillies.
Otherwise I'd pickle them as you would for pickled onions remembering to make a slit in each before you salt them.

Nik,the chilli vodka recipe looked good,untill I saw the words "remove the seeds".It must be a recipe for girls chilli vodka,the real men throw extra seeds in and strain through the teeth (a bit like drinking Cairo tap water,only without the algae build up) :D.

Sandinista,once upon a time,in a place far,far away I got some hot chilli sauce from a rouge Falafel in the eyes.The effect was both painful and extremely funny (for the gathering crowd) ,if you can imagine an old school break dancer whirling around on the floor of the local night spot,hands clawing at his own eyes.I was saved by a passing (on the pi##) medic from the 82nd equipped with a first aid kit of bottled larger (beats sterile water any day).It was a painful experience but the family jewels came through it all unharmed,and everybody lived happily ever after..... :-[
