Not sure on the mercenaries, maybe the Marlburian Bavarian grenadiers Dave tells me?  Could do with a pic of what you're after really?

On the Rajtarii, I've dug up a couple of pics on Google, and it looks like something from the Elizabethan range, either EL8 - Demilance, or EL9 - Gendarme.

I'm sure someone with a better knowledge of the period can jump in though.

Rajtar are just standard western style cavalry of the period they come from. So at this time they would look like standard Marlburian cavalry and you can use any Marlburian cavalry for them.

The infantry are more of a problem because the Poles didn't have much infantry at this time and usually fought without any. Those that did appear could be in old style uniforms. For the Germans this could be P10 musketer with fur hat but there is no picture on the site so I am not sure - but it sounds right. Personally I wouldn't bother with Hungarians as only one small unit was every used but they could be the P10 figure or P4 Hajduk perhaps - again no picture so not sure. The Germans probably changed during the war to standard western style dress. So any Marlburian will do and probably Russian as well.

Oh and by the way they are not mercenaries. German infantry were Poles who dress in western style clothes at least usually. Hungarian infantry were Poles who dress in Hungarian/Turkish style clothes.
