Who carries them, just Samurai, and what proportion of a unit?

The other banners, are these just a preference thing?

Do the rolls of bamboo have any particular purpose, or are they just useful decoration?

They tended to be worn by everyone, especially by the Sengoku Jidai (16th century civil war period). Larger ones tended to mark commanders, but even the commoners wore small ones and the tall varieties (often requiring a couple of men to maneuver) tended to be used as signal devices to tell a unit where to go.

The bamboo rolls served a similar roll to sandbags, creating barricades and something to absorb all the lead flying at you. At one point the Japanese were producing more guns than anywhere else in the world by some accounts so defensive emplacements were common. Combined with the palisades this would produce some deadly kill zones, as the Takeda cavalry found out at the Battle of Nagashino.

Sashimono would be worn by both Samurai and Ashigaru. Not necessarily all of a unit would be wearing them as they are pretty big and could get in the way. Not sure if I've seen an estimate of actual numbers worn and I'll have to dig up my books to see if any of them give a clue.

Large or small would depend on the actual clan and its heraldry, so if you are using historical ones you would need a bit of research.

As mmcv says, they were used as improvised defences in a variety of ways.  Our sculptor had made a single one for us to duplicate for the Kuruma Date shield, so we thought we might as well pop it in the range as well.  I've attached a picture our sculptor sent us of a selection of defences (ignore his writing on it!)

This is a useful resource for sashimono and other banners. Sadly marred by Photobucket's stupid overlays, but still useable because if you follow the link to Photobucket itself you can see the image without it.
