I'm having lunch with a Hindu friend today. She's as light-skinned as I am.

Yes I had a Sikh friend who was lighter skinned than me ( I have some Italian ancestry). So its all relative.

I had a Sikh friend who was significantly paler than I am.   I have some Italian ancestry.

Forgive my musings, I started this hobby when paint suppliers provided a single skin tone called "Flesh".

Same here, Airfix M7. Even at the time I thought it looked nothing like any flesh colour I'd seen in real life. Every colour called "Flesh" - and I assume they're going for Northern European as the base here - has generally looked far too pink to my eyes.
